A crispy cookie with lime.
170 g butter, room temperature
60 g powdered sugar
Grated rind of 2 limes, organic
2 tbsp. lime juice
1 tbsp. vanilla sugar
275 g flour
2 tbsp. maizena (corn starch)
½ tsp. salt
powdered sugar for dusting
Beat butter and sugar until fluffy. Add lime juice, rind and vanilla sugar. Mix the dry ingredients, add them and knead together to a dough. Form logs, wrap in cling-film and stash in the freezer. When the dough is firm, the logs are sliced, approximately 3/4 cm, and the cookies are baked at 175 degrees Celcius, for 10-15 minutes, until slightly coloured. Let the cakes cool a little and dust with powdered sugar.
