Delicious homemade toffee!!!
This is so delicious, it is kind of like Daim, but so much better :) You do need a candy thermometer to make this, but it is easy peasy!
250 g sugar
250 g butter
80 ml water
1 tsp vanilla powder or vanilla sugar
½ tsp salt
Melt all the ingredients together, and boil the mixture while stirring, until it reaches 148 degrees Celsius. Pour the mixture into a dish lined with parchment paper, and wait until it is completely cool.
If you want, pour melted chocolate over the toffee and wait until it sets. Otherwise just break to pieces and eat!!
For a christmas variation, add a teaspoon of ground christmas spices. For a different twist, add the salt just before puring into the dish, this will give little salt pockets in the toffee, for a delicious sweet-and-salty variation :)
