I realised early today that it was Pi Day (the blessing of foodblogging, early remembrance on any type of holiday). However, actually making a pie (you know Pi, Pie) didn’t occur to me before I coincidentally happened to finish work early and found myself in charge of dinner for four. The whole “responsible for dinner part ” made it easy to determine that the dessert pie should be simple and easy. My Oreo crust is ridiculously easy to make (especially if one is in possession of a food processor or chopper) and by chance I found Dulce De Leche in the local supermarket, and decided on a whipped cream dulce de leche filling.
Furthermore, making the pies in silicone muffin cases made individual servings easy, and made it possible to use a softer filling.
Now! The recipe:
Oreo Caramel Pie
½ portion oreo crust
Filling:
1 dl heavy cream
2 tbsp. Dulce de Leche (or similar)
Prepare the crust mixture, and divide between 6 muffin tins. Press the mixture into the bottom and up the sides of the muffin cases, and bake them for 5 minutes at 180 degrees Celsius.
Let the crusts cool completely, and prepare the filling. Whip the cream, and whip the dulce de leche into the cream. Spoon the filling into the crusts and serve with a spoon!
