I am always on the lookout for cut out cookie recipes. These cookies must retain their shape when baked and they HAVE to taste good. I have a brilliant recipe for vanilla cut out cookies (These are known as sugar cookies as well) and a good recipe for chocolate cut out cookies. But obviously, this isn’t enough. On a whim, I decided to add raw liquorice powder to my vanilla cookie dough, and I am very glad I did. The liqourice is not overpowering, but it adds quite a nice aftertaste. The liqourice powder I use is actually a granulate, so it is tiny balls of liqourice flavor, packed in the cookie. Using a finer powder would probably give a more evenly distributed liqourice flavor (probably equally delicious).
175 g butter, room temperature
200 g sugar
2 tsp vanilla sugar
1 tsp salt
2 eggs
400 g flour
1 tsp baking powder
3 tbsp. (more if you are really into liqourice, less if you are more skeptical) liqourice powder
Cream the butter and sugar until fluffy, and add the eggs. Mix in the liqourice powder and then the dry ingredients.
Divide into two discs, roll out, cut out and bake at 180 degrees Celsius for 8-15 minutes.
