Nice, spicy and sweet gingernuts! These can be both chewy or hard, depending on the baking time.
300 g flour
1 tsp. baking soda
1½ tsp. ground ginger
½ tsp. ground cinnamon
115 g butter
225 g sugar
1 egg, beaten
60 ml cane syrup (or treacle or dark syrup)
100 g sugar for rolling
Cream the butter and sugar, add the egg and syrup, and mix well. Add the dry ingredients and mix to form a soft dough. Shape the dough into 2 cm diameter balls, roll the balls in sugar and place on a baking sheet. Press the dough down slightly, and bake at 175 degrees for 12 minutes or so (depending on the oven) untill golden. Let the cookies cool on a wire rack.
