Classic Mississippi Mud Cake, delicious and intense!
250 g butter
240 g dark chocolate
80 g cocoa
3 tbsp. instant coffee
175 ml water
4 eggs
120 ml buttermilk
3 tbsp. flavourless oil
300 g flour
550 g sugar
2 tsp. baking powder
1 tsp. baking soda
Melt chocolate, butter, water and coffee. Mix eggs, buttermilk and oil in a jug. Combine the dry ingredients.
Combine all the ingredients, and pour into a buttered tin.
Bake at 160 degrees for 1½-2 hours, until a skewer comes out clean.
