In Denmark, “Dream Cake” is a very popular cake. It consists of a yellow sponge cake, with a caramelized-sugar-coconut topping. Delicious!
This is the muffin version, but can be made as cake as well. just pour the batter into a mould, and when a cake skewer comes out clean, spread the topping and finish the cake in the oven.
250 g all-purpose flour
250 g sugar
50 g butter, melted
3 eggs
2 dl milk
2 tsp. baking powder
1 tbsp. vanilla sugar
Topping:
125 g butter, melted
½ dl milk
200 g brown sugar
100 g shredded coconut
Whisk the eggs and sugar until foamy, add the butter and milk. Stir in vanilla sugar, flour and baking powder.
Divide the batter between cupcake moulds, about 1/4. (or pour the batter into a single mould)
Bake at 200 degrees Celsius, for 10-15 minutes (I would guess 20-25 minutes for a single mould, but try with a cake skewer).
add the topping to the muffins, and bake for 5 more minutes (5-10 minutes for a single cake)
The topping is prepared by melting butter, milk and sugar together, letting it reach a boil and stirring the coconut in.
